DEFINITION
The Double Concentrated Tomato Paste is manufactured by the concentration of the tomato juice to 28-30% Brix adding only coarse salt.

DESCRIPTION
The Double Concentrated Tomato Paste in consideration of his concentration is fit for making gravy and/or condiments that need an accentuated colouring and a strong taste. It can be utilized also to exalt the taste and the colour of vegetable soups or to prepare cooking sauces for red meats, contributing to make them soft and tasteful.
Since the beginning of its activity Pezziol made a particular care on selecting the seeds and during the processing phases with the end to obtain a product of higher quality. And it’s for this reason that the Double Concentrated Tomato Paste from Pezziol is constantly recognized as excellent product put in the range "high" into the tomato market. It's completely natural without addition of additives or chemical preservers. No OGM.

PROCESSING PHASE
The tomatoes, previously washed in running water and selected, are burnt by steam at 80° C and than sieved to separate juice from peels and seeds. The obtained juice will be concentrated under vacuum (at low temperatures) so as do not change the fragrance and maintain the vitamins existing in tomato. After that the product is canned in definitive containers and pasteurized at a temperature of about 90° C and than cooled.

SHELF LIFE
The product maintains his organoleptic properties and his physical and chemical characteristics for almost 24 months if stored in covered warehouses at room temperature.
